This is awesome! I volunteer at our local food pantry, and this time of year we get sooo many cans of pumpkin donated, but not a lot of our clients actually want the pumpkin (really, all they know to do with it is make pies). And pumpkin is soooo healthy, full of beta carotene (vitamin A) and low in calories… now I can suggest they use it in this recipe (because we do offer them boxes of cake mix) and they can save their egg for a higher protein breakfast, and they don’t need the fat from the oil I can’t wait to share!

I've been craving pumpkin bread but just didn't have the gumption to make it. When I saw this, I dug through my pantry and mixed yellow cake mix with pumpkin and a little pumpkin pie spice.
